This is a quick and easy dinner! Salmon is so good for you! Any fish is good for you. In fact you can use any fish you want when making this dish.
I want to try this when we go camping. It would be fun to catch some fish and make it with the fresh fish you caught. Wouldn’t that be a great dinner with fresh fish? Maybe even in the dutch oven!

I love cooked pineapple! I love any pineapple. Pineapple is a great natural sweetener as well. Adding this to the fish sweetens the fish a little bit.
The sauce adds a lot of flavor to the fish. This fish is so juicy and good.
It is never to late to start eating healthy. We have to eat healthy to be healthy. We also need to exercise!
Pineapple Salmon with Lemon Garlic Sauce
4 salmon fillets
1/2 pineapple sliced or 1 20 oz can pineapple slices (make sure it is the one in it’s own pineapple juice and not the syrup)
1/4 c. butter
1/3 c. honey
3 garlic cloves, crushed
2 Tblsp pineapple juice
1 Tblsp parsley
Salt & pepper to taste
- Preheat oven to 400 degrees.
- In a 9×13 pan lay out pineapple in bottom. Place salmon fillets on top. In small saucepan melt butter. Add honey, garlic and lemon juice. Stir until melt and well mixed. Add parsley. Stir. Pour over salmon. Salt & pepper to taste.
- Cover pan with foil. Bake for 15 minutes. Enjoy!
