Ginger cookies

Recently  we just had a family reunion and everyone was asked to bring cookies.  Most people like ginger cookies.  They are so good!  Being on a whole foods diet and eating at functions like family reunions can be difficult.  Whenever possible we like to bring something we can eat and something others will enjoy as well.

Healthy Ginger Cookies

Did you know that there are many health benefits in ginger?

Ginger has been known to have anti-inflammatory properties.  That is good news for those of us that have arthritis!

It is also great for nausea.  I ate a lot of ginger cookies when I was pregnant with our third child.  It helped a lot!

It can also help reduce blood sugar levels, heart disease, cancer, improve brain function.  Ginger really is good for a lot of things.

 

Healthy ginger cookies

So why not make some ginger cookies sweetened with honey and made with whole wheat flour and enjoy the nutrition and the great taste!

Ginger Cookies

1/3 cup butter, room temperature
2/3 cup molasses
1 egg
2 1/2 c. whole wheat flour
1 tsp. baking soda
2 tsp. cinnamon
2 tsp. ginger
1/4 tsp. dry mustard
1/4 tsp. sea salt

Beat butter & molasses until fluffy. Add egg. Beat until combined. Add flour, baking soda, cinnamon, ginger, dry mustard, and salt. Beat just until combined. Refrigerate several hours. Roll dough to 1/8 in thick. Cut into shapes. Bake 375 degrees for 5 minutes.
