Delicious Zucchini Bread

My mom and mother-in-law gave me a lot of zucchini.  I love it when I get fresh garden produce!

With all this zucchini I wanted to make some zucchini bread.  I have not made zucchini bread in years!  Do you know how hard it is to find a recipe that has no sugar?  It is hard!

I pulled out some of my old cook books and got to work altering recipes.  I think I succeeded! It is so good!  I could eat this whole loaf my self but it is super filling with the whole wheat in it.

Zucchini bread has a lot of sugar in it.  Maybe that is why it is so good.  I never paid much attention to how much sugar until now.  Recipes I found have 1 cup of sugar for 1 loaf of bread.  That is a lot of sugar!

We need to avoid sugar at all costs!  It is so bad for our bodies!  Sometimes the only way we eat the good stuff is if we load it up with sugar.  We need to stop!  Sugar is highly addictive.  It eats away at your bone density.  Cancer feeds on sugar.  There are so many things wrong with sugar.

When I grated the zucchini I left the peel on the zucchini.  The peel has most of the nutrients in it.  It also adds more color to the bread.

This is so easy to put together.  When you make the whole wheat bread, if you grind extra wheat then you have flour ready to use for other recipes like this one.  Remember that the flour does not have preservatives in it so you should keep it in your freezer so it doesn’t go bad.  If you don’t have a wheat grinder you can also buy wheat flour at the grocery store.

Delicious Zucchini Bread

1 1/3 cup shredded unpeeled zucchini
1/2 cup honey
1/4 cup extra virgin coconut oil
1 1/2 cups whole wheat flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp ground nutmeg
1/4 tsp baking powder
1/2 cup chopped walnuts (optional)

In a mixing bowl mix together zucchini, honey and oil. Stir in flour, cinnamon, baking soda, salt, nutmeg, baking powder. Gently fold in chopped walnuts. Turn batter into a greased loaf pan. Bake in a 350 degree oven for 55 to 60 minutes. To check if done insert a tooth pick in center. If it comes out clean it is done. Cool in pan for 10 minutes. Remove from pan and cool thoroughly.
