This zucchini soup recipe is a great way to use all the zucchini from your garden. We did not get to plant a garden this year but we have been fortunate to have parents and neighbors giving us vegetables. Fresh garden vegetables are the best!
I feel like if you plant zucchini you will have a lot! It grows like crazy! It is so good to plant with kids because they will see the results of their labor.
I like this soup because there is a lot in it. It is good for you. Add a slice of your homemade whole wheat bread and you have a great fall meal.
I love cooking in my crock pot! It is nice to come home and smell dinner cooking. There are times when there just isn’t time to get it in the crock pot in the morning. If that is the case you can make this on the stove top or pressure cooker.
Chicken, Zucchini, and Summer Squash Soup
1 yellow onion, finely chopped
2 lbs. boneless, skinless chicken breasts
1 15 oz. can tomato sauce
1 tsp. cumin
1 tsp. garlic powder
1/2 tsp chili powder
3 tsp sea salt
32 oz. chicken broth
4 cups water
3 medium zucchinis, chopped
2 medium summer squash, chopped
3 cups kale, chopped
2 limes, juiced
- In a slow cooker add onion, chicken, tomato sauce, cumin, garlic powder, chili powder, salt, chicken broth, and water. Cover and cook on high 4 hours or low 6 hours.
- Remove chicken and shred it with 2 forks. Add back to slow cooker along with zucchini, squash, and kale. Cover and cook on high for 30 minutes or until zucchini, squash and kale are tender.
- Stir in lime juice. Serve
