Nachos are often thought of as a side dish but with this recipe you can make this as your main dish for dinner. Sometimes we have busy days and we need a meal that is easy.
I came across this recipe years ago. I am not sure where I found it. My family really like this recipe. It is so easy to make.
I usually buy my hamburger in bulk at Costco. When I get it home I will cook the whole thing and freeze it in bags so it is ready to go. If you do this you will want to start cooking some of your meat with onions and freeze it together. Then all you need to do is defrost the meat and onions and you are ready to go.
We eat it with tortilla chips. You really need to look at the ingredients of your chips. Tortilla chips are not perfect as the oil is not ideal but that is the only thing that is not ideal.
Another idea is a nacho bar. There are a lot of toppings you can put on in addition to this main recipe. Some topping ideas are: tomatoes, lettuce, olives, avocado, sour cream. Be as creative as you would like.
1 lb. ground beef
1 lrg onion
1 tsp. salt
1/2 tsp. cumin
1 tsp. garlic powder
2 16 oz. can refried beans
3 cups cheese
1 tsp. paprika
1 tsp. chili powder
1 4 oz. diced green chilies
3/4 c. salsa
- Preheat oven 400 F
- Cook ground beef & onion. Add salt, garlic powder and cumin. In bowl mix refried beans, 2 cups of cheese, paprika, and chili powder. In baking dish spread bean mixture, meat, green chilis, remaining cheese, salsa. Bake 20 minutes.
- Layer tortilla chips, super nachos, desired toppings.
- Suggested toppings: lettuce, tomatoes, avacodo, olives, sour cream
