If you are like us, we eat a lot of Mexican food. If you eat a lot of Mexican food you need a good, basic tortilla recipe.
Tortillas are easy to make. Most of the time I get hubby to make them because they have kind of scared me. I don’t know why they scared me because they are so easy to make!
First, you want to mix your whole wheat flour and salt together. For your whole wheat flour you can grind wheat in an electric wheat grinder or buy the flour at the store. If you buy the flour you will want to make sure it is whole wheat flour. Nothing else.
Then, cut in the coconut oil. You can use butter if you want. I like to use coconut oil because it helps you get your 2 Tblsp. of coconut oil in for the day. You want the flour to be crumbly.
Gradually add the water and mix until the dough is stiff.
Knead for 5 minutes. Let rest for 5 minutes. Form dough into small balls. Roll out onto oiled counter.
Heat skillet on medium-low heat. Place in heated skillet. Cook both sides until golden brown. The dough will bubble while cooking.

Whole Wheat Tortillas
2 cups whole wheat flour
1 tsp. salt
1/4 cup extra virgin coconut oil
1/2 c. water at room temperature
Mix together whole wheat flour and salt. Cut in coconut oil. Gradually add water. Mix until dough is stiff. Knead for 5 minutes. Let dough rest for 5 minutes. Heat skillet at medium- low heat. Cook in heated skillet until golden brown.
