I love this recipe for super easy chicken burritos! You can make these in your Crock Pot or Instant Pot. There are only 5 ingredients. That is it! And the flavor is divine!
Of course for burritos you need tortillas. To keep this recipe whole and nutritious you want to make your own whole wheat tortillas. You can find my recipe for whole wheat tortillas here.
The tortillas are the hardest part of this recipe and they really are not hard to make.
If you decide to cook the chicken in your Crock Pot you will want to cook on low heat for 6-8 hours. High heat for 4 hours.
If you make this in your Instant Pot on high pressure for 25 minutes.
I usually make mine in my Instant Pot. I love my Instant Pot. One day I was at my daughter’s house when she was making dinner and she was using her Instant Pot. It looked so cool. I started asking her about it. On the way home my hubby said “Let’s get one for my birthday.” He is the best! We love it!
But you can also make this in your crock pot. It is just as easy to throw it in your crock pot in the morning before you head out for the day.
Also, remember to look at the ingredients for the salsa verde. You don’t want sugar. You might be surprised at what they put sugar in. Sometimes I have a hard time finding salsa verde without the sugar.
As a general rule I plan on one chicken breast per person. Also, after the chicken is cooked remove and shred with two forks. Put the chicken back in the cooker to absorb the juices until you are ready to serve.
You can use toppings for your burritos such as cheese, lettuce, tomato, olives, salsa, sour cream, guacamole, etc.
Salsa Verde Chicken Burritos
2 lbs. chicken
1 tsp. cumin
1 tsp. paprika
1 tsp. salt
1 16 oz bottle salsa verde
- Place all ingredients in your crock pot or instant pot.
- For crock pot cook on low 6-8 hours. High for 4 hours.
- For instant pot set cooker to high pressure for 25 minutes.
- Once chicken is thoroughly cooked shred. Put chicken back in juices. Let the chicken soak up some of the juice for juice tender chicken.
