Rocky Mountain Trail Cookies

Cookies are great to take with you hiking.  As you are walking along the trail and you need a pick me up it is easy to grab a cookie and keep on going.  These trail cookies will not disappoint!

I made these cookies last night and some of our children came over today for dinner and saw them sitting on the counter.  They got excited to have some cookies!

The kids all gave these trail cookies a thumbs up.  It passed the young adult test!  And hubby loves them too so it also passed the middle age test too.  🙂

These cookies have [easyazon_link identifier=”B004W9H7I8″ locale=”US” tag=”beewhole-20″]Peanut Butter[/easyazon_link] for protein.  Just make sure the only ingredients in your peanut butter are peanuts and salt.

And, of course, the nuts and seeds.  They are filling as well and have a lot of benefit to eating them.

I also added in some [easyazon_link identifier=”B00LAFOEVU” locale=”US” tag=”beewhole-20″]raw cacao nibs[/easyazon_link]!  You gotta have chocolate in your cookie, right?!  And in case you didn’t know, there are all sorts of health benefits from raw cacao.  You can read about the health benefits here.

These cookies are set to give you the energy you need and not empty calories.  And they will keep you feeling full longer, which is a must when exercising or hiking.

I grind the flax seeds up a little in a [easyazon_link identifier=”B0118FH5HG” locale=”US” tag=”beewhole-20″]coffee grinder[/easyazon_link].  You want to break up the seeds so your body can digest them easier.  And also so you can get the health benefit of the seeds.  I don’t drink coffee, but I use my coffee grinder a lot for grinding seeds.  You can also use it if you are grinding a small amount of grains.  It is perfect!

Also for the whole wheat flour you can either grind it with a wheat grinder or purchase the whole wheat flour.  I have the wheat grinder I like to use in the shop as well as the whole wheat flour I like to use if I am going to purchase it.

Rocky Mountain Trail Cookies

1 1/4 cup whole wheat flour
3/4 cup rolled oats
2 tsp. cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
1/4 cup butter, softened
1/4 cup peanut butter
1/3 cup raw unfiltered honey
1 egg
1 tsp vanilla extract
1/2 cup slivered almonds
1/4 cup macadamia nuts
1/3 cup raisins
1/4 cup raw cacao nibs
2 Tblsp. flax seeds, ground

  • Preheat oven to 350 degrees F.
  • In large bowl mix together flour, oats, cinnamon, baking soda, baking powder, and salt.
  • In small bowl beat butter, peanut butter, and honey until smooth. Add egg and vanilla. Beat until combined.
  • Add to flour mixture and stir until combined. Mix in nuts, raisins, cacao nibs and ground flax seeds.
  • Roll into balls (about 2 Tblsp.). Flatten slightly. Bake for 12 minutes or until golden brown.
