Healthy No Bake Cookies

I remember as a kid making no bake cookies.  One of my daughters loved making no bake cookies too.  I think she liked making them because they are quick and easy.  And YUMMY!

I wanted to have adults and children test these cookies before I shared them with you.  I took some to my grandchildren.  Both of my cute grandsons loved them!

My grandson had a friend over and he asked if the friend could have one.  I said if it was okay with the friends grandma then it was okay with me.  He went to ask the grandma and said “Can she have a cookie?  They don’t have sugar in them!”  Smart boy!  🙂

To keep these no bake cookies healthy we need to use ingredients that are whole and don’t have the junk in them.  I will also share links with you on why these cookies are healthy.  So many health benefits from a simple cookie.

I use [easyazon_link identifier=”B01M25XYLZ” locale=”US” tag=”beewhole-20″]raw cacao powder[/easyazon_link] in all my cooking that calls for cocoa powder.  There are SO many health benefits from the cacao bean when it is raw.  I shared some of those benefits with this recipe.

For your [easyazon_link identifier=”B004W9H7I8″ locale=”US” tag=”beewhole-20″]peanut butter[/easyazon_link] you want the only ingredients to be peanuts and salt.  One bad thing about using peanut butter that is natural is it tends to separate.  I found that if I put it in the fridge upside down then when I open it to use it the liquid is now on the bottom instead of the top.

Healthy No Bake Cookies

1 cup raw unfiltered honey
1/2 cup extra virgin coconut oil
1/2 cup raw cacao powder
3 cups rolled oats
1 cup peanut butter
1 tsp. vanilla
1 cup unsweetened coconut (optional)

  • In medium saucepan combine honey, coconut oil, and cacao powder. Bring to a boil over medium heat for 2 minutes.
  • Remove from heat. Stir in peanut butter until peanut butter melts and mixture is smooth.
  • Stir in oats, vanilla and coconut. Drop on wax paper. When it cools a little you can form into balls.
