I love the flavor of this honey garlic chicken! The sauce is poured over the chicken and then baked. This allows it to soak into the chicken while cooking and gives the chicken a great flavor.
And because everything is thrown into one pan it makes clean up so fast and easy! That is a huge plus!
The sauce is easy to make. Just put all ingredients in your saucepan and heat until the coconut oil is melted and the raw honey is softened. Stir while heating so the ingredients are mixed well.
We had some of this left over so I cut the chicken up and used it in a salad. I kept it cold and it was perfect!
Honey Garlic Chicken and Vegetables
2 Tblsp extra virgin coconut oil
2 Tblsp butter
2 Tblsp raw honey
1 Tblsp mustard
3 gloves garlic, minced
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp sea salt
1/2 tsp black pepper
1 lb. red potatoes
24 oz. broccoli florets
- Preheat oven to 400 degrees. Lightly oil a baking sheet with extra virgin olive oil.
- In a small pot mix together coconut oil, butter, honey, mustard, garlic, oregano, basil, sea salt and pepper. Heat over medium-low heat until well mixed and coconut oil is melted.
- Cut potatoes in bite-sized pieces. Place on baking sheet. Place chicken over potatoes. Top with honey garlic mixture.
- Place in oven and bake for about 30 minutes. You want the chicken completely cooked and the potatoes to be tender. During the last 8 minutes place broccoli over chicken and potatoes.
