These cookies are a great gluten free cookie. Made with oats and flaxseed. You will want the flaxseed to be ground so your body can digest it easier. I have a small coffee grinder that is perfect for grinding a small amount of seeds, oats, etc. It is perfect! The grinder I use is on my shop page.

Pumpkin Trail Mix Cookies
1/4 cup extra virgin coconut oil
1/4 cup raw unfiltered honey
1 cup old fashioned oats
1 cup quick oats
1/2 cup raisins
1/2 cup pumpkin seeds
1/4 cup raw unsweetened cacao nibs
1/4 cup flaxseed, ground
1 tsp. pumpkin pie spice
1/2 tsp. salt
1/2 cup 100% pumpkin
2 eggs, beaten
- Preheat oven 325 degrees.
- In small bowl melt coconut oil and honey together.
- In large bowl combine all ingredients. Stir until fully combined.
- Form into balls on ungreased cookie sheet. Flatten slightly.
- Bake 15-20 minutes.
