Pumpkin Trail Mix Cookies

I love fall and all things pumpkin!  Not only is fall a great time for pumpkin but also fall leaves!

I love how colorful our world becomes!  I want to be outdoors and enjoy the perfect weather before it gets too cold!

While you are enjoying the great outdoors why not take some cookies that will give you nutrition as well!

Pumpkin Trail Mix Cookies

These cookies are a great gluten free cookie.  Made with oats and flaxseed.   You will want the flaxseed to be ground so your body can digest it easier.   I have a small coffee grinder that is perfect for grinding a small amount of seeds, oats, etc.  It is perfect!  The grinder I use is on my shop page.

This recipe also has cacao nibs.  They are like healthy little chocolate chips.  Did you know the cacao bean is actually good for you?  Some of the health benefits of the raw cacao bean are:

Pumpkin Trail Mix Cookies

Pumpkin Trail Mix Cookies

1/4 cup extra virgin coconut oil
1/4 cup raw unfiltered honey
1 cup old fashioned oats
1 cup quick oats
1/2 cup raisins
1/2 cup pumpkin seeds
1/4 cup raw unsweetened cacao nibs
1/4 cup flaxseed, ground
1 tsp. pumpkin pie spice
1/2 tsp. salt
1/2 cup 100% pumpkin
2 eggs, beaten

  • Preheat oven 325 degrees.
  • In small bowl melt coconut oil and honey together.
  • In large bowl combine all ingredients. Stir until fully combined.
  • Form into balls on ungreased cookie sheet. Flatten slightly.
  • Bake 15-20 minutes.
