I love adding pumpkin to common recipes! Pumpkin adds a different flavor to ordinary everyday food. These pumpkin waffles will not disappoint. They are yummy and filling!

This pumpkin waffles recipe is made like an old fashioned recipe. I have not made waffles the old fashioned way in a while because it is a little more work but the extra work is worth it! They are so yummy!
You will beat together 3 egg whites until they form stiff peaks. This will take several minutes. Be patient. The eggs will become stiff and form peaks. Once they form the stiff peaks you will fold them into the batter.
You will also use whole wheat flour. In a whole food diet you don’t want to eat white flour. White flour is over processed and left with not much nutrition. Whole wheat flour is a good source of magnesium and vitamins B1 and B3.

Remember if you are eating a whole food diet to be healthy you want your food to be as whole as can be. You can not always be perfect but you want to be as close to perfect as you can.
3 egg whites
1 1/2 cup whole milk
1 cup 100% pure pumpkin
1 egg yolk
1/4 cup melted butter
1 Tblsp raw unfiltered honey
2 Tblsp raw unfiltered apple cider vinegar
2 cups whole wheat flour
2 tsp. baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp sea salt
- In a bowl whip 3 egg whites until stiff peaks form. Set aside.
- In a medium bowl combine milk, pumpkin, egg yolk, butter, honey and vinegar. Mix well.
- Add flour, baking powder, baking soda, cinnamon, pumpkin pie spice and sea salt. Stir to combine.
- Gently fold in egg whites.
- Cook in preheated waffle maker.
