Healthy Cornbread

This cornbread recipe is very simple.  Only 7 ingredients and it is delicious!  I love recipes that you don’t need a lot of ingredients for.  Simple is so much easier!

Eating a whole food diet does not mean the recipe needs to be difficult or time consuming.

Healthy cornbread

Most cornbread recipes call for sugar.  Some have a little sugar and some have a lot.  For this recipe I chose not to add any sweetener.  When I eat  cornbread I generally top it with butter and honey.   To me this is enough of a sweetener.  Especially if you are eating the cornbread with chili or beans.

Although, if you feel like the butter and honey is not enough sweetener and you need a little more, you can add a tablespoon or two of honey to your batter.

I have a grain grinder that I LOVE.  I love to grind my flour fresh!  No preservatives and it is whole grain.  So much better for you!

You can buy cornmeal but it generally has additives in it.  I bought some [easyazon_link identifier=”B00ML2EK8S” locale=”US” tag=”beewhole-20″]Corn here.[/easyazon_link]  It is a lot of corn but it will stay good for years.

I have a [easyazon_link identifier=”B000CPJKWC” locale=”US” tag=”beewhole-20″]WonderMill Electric Grain Grinder [/easyazon_link] that I love for grinding grain into flour.  If you are eating a whole food diet it is worth the investment.  So much more nutrition in freshly ground flour!

Healthy Cornbread

Our favorite chili recipe is here.   The chili recipe is a simple recipe as well.  I am all about simple when it comes to cooking!

Healthy Cornbread

2 eggs
2 cups whole milk
3 Tblsp. extra virgin olive oil
2 1/2 cups corn flour or cornmeal
1 tsp. sea salt
1 Tblsp baking powder
1/2 Tblsp baking soda

Instructions

  • Preheat oven to 425 degrees.
  • In medium bowl beat eggs. Stir in whole milk and olive oil. Mix in remaining ingredients until smooth. Pour into greased 9×9 pan.
  • Bake for 25 minutes or until golden.
