Honey Caramel Popcorn

My daughter requested that I make some caramel popcorn.   I have already done a kettle corn recipe using honey but she wanted caramel corn.

It took me a couple of tries but I think we have a keeper!

Last week I gave my niece a bridal shower and made this caramel popcorn.  Everyone loved it.  I made a double batch and it was gone fast!

Honey Caramel Popcorn

When eating a whole foods diet many of our friends and family wonder what we eat.  They also think they can’t do it for themselves because they will miss the treats.  You don’t have to miss out on treats!

We make our popcorn in a [easyazon_image align=”center” height=”88″ identifier=”B00004SU35″ locale=”US” src=”https://beewhole.blog/wp-content/uploads/2017/12/51VhdYAyQQL.SL110.jpg” tag=”beewhole-20″ width=”110″].  Put some coconut oil in the popper and once it is melted add the popcorn. Stir the popcorn by rotating the crank on the popper until the popcorn has all popped.

Once the popcorn is done put in a large bowl.  Cook the honey and butter.  Add to the popcorn then bake.  So easy!

Raw honey can lower blood pressure, help improve cholesterol, help with digestive issues.  And so many more health benefits.

Coconut oil has a wealth of benefits as well!  I share some of those benefits here. 

Honey Caramel Popcorn

Even though this is made with butter and honey it does not have a honey taste.  It tastes like caramel!

Honey Caramel Popcorn

2 Tblsp. extra virgin coconut oil
1/2 cup popcorn
1/3 cup butter
1/3 cup raw honey
1/4 tsp. baking soda
1/4 tsp. vanilla

 

Instructions

In whirley pop popper heat oil. Add the popcorn and close lid.
Slowly crank until popcorn is popped. Remove from heat.
Pour popcorn into large bowl. Set aside.
In medium saucepan combine butter and honey.
Cook and stir over medium heat until butter melts and mixture comes to a boil. Cook without stirring for 5 minutes.
Remove from heat. Stir in baking soda and vanilla.
Pour over popcorn. Gently stir until well coated.
Transfer to a baking sheet. Spread out into an even layer.
Bake at 300 degrees for 15 minutes.
Remove from oven. Stir and transfer to a bowl.
Once cooled enjoy!
