In the winter when we are starved for some sun, soup is a great pick me up.

This beef, barley & lentil soup will not disappoint. There is so much nutrition in every bite! And we all know that nutrition is so important if you want to feel good!

Barley is high in fiber and helps control blood sugar levels. It also helps improve digestion and weight loss.
Lentils are very low in fat and carbohydrates. They are very high in vitamins.
Of course carrots are claimed to be the perfect health food. We all know they are a great source for Vitamin A. We need vitamin A for healthy skin and our immune system.
Celery is a good source of vitamin B2, vitamin C, vitamin B6, and calcium! Those are all great things to have in the winter.
Beef, Barley, & Lenitl Soup
1 lb. ground beef
3 15 oz can beef broth
1 cup water
1 tsp. black pepper
1 Tblsp. granulated onion
3 carrots, chopped
3 stalks celery, chopped
1/2 cup barley
1/2 cup lentils
- Brown ground beef in soup pot over medium heat.
- Add remaining ingredients.
- Bring to a boil. Lower heat to medium low.
- Simmer for 45 minutes or until barley, lentils, and vegetables are tender.
