Beef, Barley, & Lentil Soup

In the winter when we are starved for some sun, soup is a great pick me up.

On a cold winter night a bowl of soup is the best!  Makes your tummy warm and happy.

This beef, barley & lentil soup will not disappoint.  There is so much nutrition in every bite!  And we all know that nutrition is so important if you want to feel good!

Yesterday we went on a hike.  It was a bit chilly but so much fun!  A perfect end is a big bowl of yummy soup!

Having fibromyalgia and arthritis I am grateful every day that I am able to be pain free and do active things with my family!  My story of how I got started on this journey is here.

At first it was a huge sacrifice to change the way I eat but after feeling so much better it is not a sacrifice at all.  It is a blessing to live my life to the fullest!

Beef, Barley & Lentil Soup

Barley is high in fiber and helps control blood sugar levels.  It also helps improve digestion and weight loss.

Lentils are very low in fat and carbohydrates.  They are very high in vitamins.

Of course carrots are claimed to be the perfect health food.  We all know they are a great source for Vitamin A.  We need vitamin A for healthy skin and our immune system.

Celery is a good source of vitamin B2, vitamin C, vitamin B6, and calcium!  Those are all great things to have in the winter.

Ingredients

  • 1 lb. ground beef
  • 3 15 oz can beef broth
  • 1 cup water
  • 1 tsp. black pepper
  • 1 Tblsp. granulated onion
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 1/2 cup barley
  • 1/2 cup lentils

Instructions

  • Brown ground beef in soup pot over medium heat.
  • Add remaining ingredients.
  • Bring to a boil. Lower heat to medium low.
  • Simmer for 45 minutes or until barley, lentils, and vegetables are tender.
