LuLu’s Breakfast Burritos

My mother-in-law, LuLu, gave me this delicious recipe for breakfast burritos.  It is perfect for a crowd or to freeze and have on hand when you need a quick meal.

My mother-in-law has affectionately been called LuLu by her children, grandchildren, in laws, etc. for years.  Anyways, she has made this for her family when they go visit her and all have really enjoyed it.

Healthy Cinnamon Rolls

Cinnamon rolls are another food I have gone without for a long time.   How could we make cinnamon rolls without sugar?  We have not eaten refined sugar in over 6 1/2 years.  As I get braver and experiment more, I am finding ways to make our favorite treats that fit within our whole foods diet.

When my oldest son was in elementary school he would sometimes buy school breakfast.  A side note: I did not know he was doing this for a long time.  He would eat breakfast at home, then go to school and eat their breakfast if it was good.   I would ask him why the lunch money was going so fast, and then finally the school asked me if I knew that he was eating breakfast at school.  So funny what kids will do.

Healthy Apple Fritters

My husband LOVES apple fritters!  I think he loves anything with baked apples.

I use whole wheat flour in this apple fritters recipe.  Sometimes when using whole wheat flour it gives the recipe a heaviness.   I like to use white wheat.  That helps a lot with the heaviness.

The best wheat to use for this is soft wheat.  I don’t have any soft wheat right now so I used the hard white wheat and it works great!

Pumpkin Muffins

Pumpkin muffins are great for breakfast or a snack any day of the week!  They are so fast and easy to make.

If you are like me and like to make recipes with pumpkin but don’t know what to do with the rest of the pumpkin, you can make these muffins!  You only need 1/2 cup of pumpkin!  You can even freeze the muffins and eat them later.

Pumpkin Waffles

I love adding pumpkin to common recipes!  Pumpkin adds a different flavor to ordinary everyday food.  These pumpkin waffles will not disappoint.  They are yummy and filling!

I  also have a pumpkin pancake recipe that I shared here.  The pancakes are yummy as well.

This pumpkin waffles recipe is made like an old fashioned recipe.  I have not made waffles the old fashioned way in a while because it is a little more work but the extra work is worth it!  They are so yummy!

Before I started eating healthy I only made pancakes from the prepackaged mixes.   I have now learned that homemade is not much more work and taste so much better!

The thing I like about these pancakes is everything goes in you blender and there are only a few ingredients.

Cinnamon Oat Waffles

Cinnamon Oat Waffles make a great breakfast.  And on those days when you want breakfast for dinner waffles is a great choice.  All you have to do is throw everything in the blender and blend.  These waffles are also gluten free for those that are allergic to gluten.

You will need a blender to breakdown the oatmeal into flour.  Don’t put oatmeal in a grain grinder.  There are too many oils in the oats that it will ruin your grinder.  You will want to also put the baking powder, salt and cinnamon in the blender with the oatmeal and blend it up until it is flour.  Blend the dry mixture for about one minute.
