Dutch oven tamale pie

My husband and I just bought a camper trailer to go camping.  We like to go camping.  We have not gone camping a lot because I have a huge fear of rodents!  Chipmunk, squirrel, mouse, rat, etc.  I am afraid of them all!  So we finally got a camper to go camping a lot more.  It isn’t pretty but we hope to have years of memories!  And hopefully our children will join us sometimes.

We love to cook in our dutch oven when we go camping.  We have a cookbook for dutch oven cooking that we have not used in a while.  It looks like we are going to have to do some changing and trying these recipes. 🙂

When cooking with a dutch oven you have the flexibility to cook in your oven or outside.  If you are cooking outside you need some hot coals.  You can get these with wood or charcoal.  Wood is generally cheaper but it burns quickly so you will need to keep adding wood to your dutch oven.  Charcoal burns longer than wood and is easier to use but more costly.

Also, make sure your coals are hot before you start cooking.   You also want them under your dutch oven and on the lid while cooking.  This will give you even heat.

  • 2 lbs. ground beef
  • 1 cup onion, chopped
  • 1 cup green pepper, chopped
  • 4 cups tomato sauce
  • 1 can olives, chopped
  • 2 cups corn
  • 1 garlic clove, minced
  • 1 tsp. salt
  • 1 1/2 Tblsp. chili powder
  • dash pepper
  • 3 cups shredded cheese
  • 1 1/2 cup corn meal
  • 1 tsp. salt
  • 4 cups cold water
  • 3 Tblsp. butter


  • In dutch oven cook ground beef, onion, and green pepper until meat is browned and vegetables are tender. Stir in tomato sauce, olives, corn, garlic, salt, chili powder, and pepper. Cover and simmer 20 to 25 minutes. While that is cooking in a small saucepan combine cornmeal, salt and water. Cook until thick. Add butter; mix well. In dutch oven stir in cheese. Spoon mixture from saucepan over hot mixture in dutch oven. Bake for 40 minutes.
  • If cooking in oven bake at 375F. If cooking with charcoal have 12 coals on ground under dutch oven and 24 coals on lid.
