Life can get busy sometimes. It may seem like you don’t have time to eat healthy. For those times when you need a quick, easy and healthy dinner fajita chicken bake is perfect! Prep time is 5 minutes or less! And it is so good!
You will make it casserole style in a 9×13 baking dish. You can leave it casserole style and eat it with rice, veggies or make homemade tortillas and eat it fajita style.
If you do want a healthy tortilla recipe you can try these whole wheat tortillas. They are really good and easy to make. You can make them while the chicken is cooking.
First thing you will want to do is defrost your chicken if it is frozen. Then you will lay the chicken in the bottom of a 9×13 pan.
Cut the onion and bell pepper. You can either slice or chop the onion and bell pepper. I like to chop so it is in bite size pieces.
Place the onion and pepper on top of the chicken. Then sprinkle with spices. A lot of recipes use taco seasoning. I few months ago I noticed that taco seasoning contains sugar. It is towards the bottom but it is still there. So I use different flavorful spices to accomplish the same thing.
For this recipe I used onion powder, garlic powder and paprika. The paprika gives it that little kick that taco seasoning gives.
Drizzle with Extra Virgin Coconut Oil. If you have arthritis or another ailment you are wanting to cure with healthy eating you want to eat 2 TBLSP coconut oil every day. Cooking with coconut oil helps you get your daily coconut oil in.
Place in preheated 375 degree oven for 35-45 minutes.
Once the chicken is cooked sprinkle the top with cheese. Place back in the oven to melt the cheese.
Easy meal and done in less than an hour.
