The hunt for healthy meals and tasty snacks has become the new norm for me and my husband.  

This is how it all came to be.

Making another healthy diet change


A few short months ago my husband read about the negative effect that the consumption of animal products can have on the health of the human body. Being convinced that we might be able to benefit by going without it in our diet, we decided to not eat meat or dairy and put it to the test.  Little did we know that the results would be so evident and rewarding that something my husband read online would soon become a new way of living.

The results

There is no doubt that it has been a successful 9 month trial.  Since I have eaten this way I have had more energy throughout the day.  With greater endurance, I am able to exercise more! Being able to test this out and now make it apart of my daily eating habits has opened my eyes to the undoubted impact that food truly does have on our bodies!

If simply changing up what types of foods you eat can make the difference for what you are able to do and how you feel throughout the day, then why not experiment a little bit to see what benefits your body and health the most?

My challenge to you

I challenge you to change something in your diet. More of this or less of that.  Just start with one thing at first. That makes it so much easier to actually keep it going!  I remember when I first started realizing what I was eliminating from my food choices. I thought I would really miss cheese…but to my surprise, after a few short days later I did not.  It was harder for me when I challenged myself to go without sugar and processed foods 7 years ago than it has been to go without meat and dairy.

You Can Do It!

If I ever think I am missing out, I just remind myself how far I have come. I would not trade my positive results for a slice of cheese or meat any day. This diet has made all the difference for me, so I encourage you to find one that works for you as well.

Finally, go through what kinds of foods you are eating. Then examine how your body responds to them. Start your way to the healthier body you want and switch up your eating habits. I would love to hear what you changed in your diet and most importantly how it made you feel.

Ingredients

  • 1 medium onion, diced
  • 3 gloves garlic, minced
  • 1/4 cup vegetable broth
  • 2 15 oz cans 100% Pumpkin
  • 2 cups vegetable broth
  • 1 13.5 oz can coconut milk
  • 2 Tblsp. Pure maple syrup
  • 2 tsp. ginger
  • 1 1/2 tsp. nutmeg
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  • In large pan over medium hear saute onion and garlic in 1/4 cup vegetable broth until onions are translucent, stirring occasionally. Stir in remaining ingredients. Cook for 15 - 20 minutes, stirring occasionally.
