Taco Chicken Rice Bowls

I like recipes that are easy to make.  Who wants to spend my day in the kitchen cooking!?!  Taco Chicken Rice Bowls is perfect!  Throw it in the crock-pot and forget about it until about 30 minutes before dinner when you will cook the rice.  You can even throw the chicken in the crock pot frozen.

Or if you forgot about dinner in the morning you can make it on your stove top.  That is how I usually end up making it as I am not usually thinking about dinner in the morning before work.

This recipe is full of flavor!  Lots of nutrition too!  Chicken, beans, veggies, and whole grains.

Taco Chicken Rice Bowls

I have an Instant Pot pressure cooker that I LOVE cooking rice in.  It is so much faster than on the stove.  You use less water as well.

I use brown rice.  White rice is fine too.

For brown rice you poor 2 1/2 cups water into the pot.

Add 2 cups rice.  (Make sure the rice is not sticking to the sides outside of the water.)

Close and lock the instant pot lid.  Set manual timer to 25 minutes.

If you make this in your crock-pot it takes 8 hours on low heat.  Or if you make it on the stove top it will take about 45 minutes.  If your chicken is not frozen it will take less time.

Also remember to check the ingredients for all the food you eat.  You want whole ingredients.  If it has something you can not pronounce don’t buy it.  Or if it has sugar don’t buy it.

Your beans should have beans, water and salt only.  Check you salsa.  Does it have only vegetables?  Check your spices.  Some spices they sneak in the sugar.  Always check your ingredients.

  • 1 1/2 lbs. chicken, boneless, skinless
  • 1 15 oz. can black beans, drained
  • 16 oz. salsa
  • 1/2 cup corn
  • 1 Tblsp. chili powder
  • 1/2 Tblsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/2 Tblsp. cumin
  • 1/2 tsp. oregano
  • 1/4 tsp. salt
  • pepper to taste
  • 1/4 cup water
  • 2 cups rice
  • 8 oz shredded cheese


  • If using crock pot add all ingredients except rice & cheese in slow cooker. Stir. Make sure chicken is covered. Cook on low 8 hours. Near the end of cooking cook the rice. Shred chicken.
  • If cooking on stove top in large pan bring water and chicken to boil. Reduce heat to medium and cook about 30 minutes. (you can put the chicken in the water frozen) Shred chicken. Put all ingredients in large pan except rice & cheese. Cook on medium heat until heated through.
  • Cook your rice according to package directions or in your Instant Pot.
  • Build taco bowl by placing rice on the bottom, then chicken mixture & top with cheese.
