Taco Rice Bowls
I like recipes that are easy to make. Who wants to spend the day in the kitchen cooking!?! Taco Rice Bowls are perfect!
Eating healthy does not mean you need to skimp on taste or cook for hours!
I usually make these Taco Rice Bowls in my Instant-Pot but if you don’t have one you can easily make it on your stove top.
I LOVE cooking rice in my Instant-Pot! It is so much faster than on the stove. You use less water as well.
This recipe is full of flavor! Lots of nutrition too! Beans, veggies, and whole grains.
I use brown rice. White rice is fine too.
For brown rice you pour 2 1/2 cups water into the pot.
Add 2 cups rice. (Make sure the rice is not sticking to the sides outside of the water.) Add the spices.
Close and lock the instant pot lid. Set manual timer to 25 minutes.
Or if you make it on the stove top it will take about 45 minutes.
Also remember to check the ingredients for all the food you eat. You want whole ingredients. If it has something you can not pronounce don’t buy it. Or if it has sugar don’t buy it.
Your beans should have beans, water, and salt only. Also, check your salsa. Does it have only vegetables? Check your spices. Some spices sneak in sugar. Always check your ingredients.
